Double cheese and tomato tart
Ingredients:
- 3 medium tomatoes
- 1 whole-wheat pizza crust
- 1 tsp olive oil
- 1/4 cup thinly sliced basil, divided
- 1 cup mozzarella, shredded
- 2 T grated parmesan
Directions:
- Preheat oven to 450F. Thinly slice tomatoes, place on paper towels. Place pizza crust on baking sheet; brush with olive oil.
- Arrange tomatoes in circular pattern on pizza crust, leaving half-inch border. Sprinkle with basil, mozzarella, and Parmesan.
- Bake 8-10 minutes or until cheese is melted and golden brown. Top with remaining basil. Cool slightly and cut.
