Double cheese and tomato tart

Ingredients:

  • 3 medium tomatoes
  • 1 whole-wheat pizza crust
  • 1 tsp olive oil
  • 1/4 cup thinly sliced basil, divided
  • 1 cup mozzarella, shredded
  • 2 T grated parmesan

Directions:

  1. Preheat oven to 450F. Thinly slice tomatoes, place on paper towels. Place pizza crust on baking sheet; brush with olive oil.
  2. Arrange tomatoes in circular pattern on pizza crust, leaving half-inch border. Sprinkle with basil, mozzarella, and Parmesan.
  3. Bake 8-10 minutes or until cheese is melted and golden brown. Top with remaining basil. Cool slightly and cut.
