Stir together mayonnaise and pesto in small dish. Spread mayonnaise mixture on both slices of bread, mayonnaise side down.
Sprinkle one slice of bread with pine nuts. Top with cheese, turkey, spinach and remaining slice of bread.
Spray outside of sandwich with cooking spray. Heat in countertop grill 3-1/2 minutes or until bread is golden and cheese has softened. OR, grill sandwich in preheated medium skillet over medium heat, turning over after first side has browned.
